Ingredients:

  • 21/4 lbGoat meat
  • 10 Garlic Cloves Paste
  • 2 Tbsp.Fresh Ginger Paste
  • 2 Tbsp.Ghee
  • 2 Tbsp.Oil
  • 2 tsp.Kashmiri Chilly Powder
  • 3 Bay Leaves
  • 1 tsp.Turmeric Powder
  • 6 Cloves
  • 3 Cinnamon
  • 4 Green Cardamom
  • 2 Aniseed
  • 1 tsp.Coriander Powder
  • 11/2 tsp.Salt
  • 1 tsp.Cumin Powder
  • 4 Tbsp.Tomatoes
  • 1 tsp.Garam Masala
  • 1 tsp.Cumin Seed
  • 3 Tbsp.Lemon Juice
  • 2 Dried Chilly
  • 1 Onion thinly sliced

Cooking Instructions:

  1. Cut goat into bite size pieces and marinate in salt, Kashmiri chilly powder, garam masala, coriander powder, cumin powder, turmeric powder and set aside.
  2. In a pot heat oil and ghee over medium heat.
  3. Once hot, add bay leaves, clove, cardamom, cinnamon, dried chilly, aniseed and cumin seeds.
  4. When it starts to sizzle and splatter add sliced onion and sauté until it becomes translucent and lightly caramelized.
  5. Add ginger and garlic paste and sauté till fragrant.
  6. Add chopped tomatoes and salt to taste. Cook for few minutes until it becomes soft and pulpy.
  7. Add the marinated goat meat and stir well. Cook for about 10 mins on medium high heat.
  8. Transfer into a pressure cooker and add 1 cup water. Stir well, close lid and pressure cook on low heat up to 5 whistles.
  9. Release pressure carefully and transfer back into the pot.
  10. Add lemon juice and stir well. Cook on medium heat until the water is reduced into thick gravy.
  11. At this point you can add slit chilly or coriander as garnish.

Serve with rice, roti or naan.
