  • 1 Onion

  • 11/2 tsp.Kashmiri Chili Powder
  • 1 tsp.Coriander Powder
  • 1/2 tsp.Turmeric Powder
  • 11/2 tsp.Mango Powder(Amchur Powder) or Lemon Juice
  • 1 tsp.Cumin Powder
  • 1/2 tsp.Garam Masala
  • 1/4 cupOil

Cooking Instructions:

  1. Begin by washing and drying 500 grams of okra. Cut the okra into pieces that are approximately 1/2 inch in size. Next, chop 5 cloves of garlic and 1 onion. Cut 2 potatoes into pieces that are the same size as the okra. Slice 1 red chili, and set all prepped ingredients aside.
  2. Heat 1/4 cup of oil in a pan over medium-high heat. Once the oil is hot, add the chopped garlic and saute until it becomes slightly brown.
  3. Add the chopped onion to the pan and continue to saute until it turns translucent.
  4. Now, it's time to add the potatoes to the pan and stir them well in the fragrant oil. To get a slightly brown color and a thin crispy layer on the potatoes, cover the pan with a lid and allow the potatoes to cook on low heat for about 4 minutes. This will also help to cook the potatoes evenly, ensuring that they're tender and delicious when you bite into them later.
  5. After 4 minutes, add salt to taste, 1 1/2 tsp of Kashmiri chili powder, 1 tsp of coriander powder, 1/2 tsp of turmeric, 1 1/2 tsp of mango powder, 1 tsp of cumin powder. Stir well to coat the potatoes well with the masala.
  6. Once the potatoes are coated in the masala, add the okra and stir well to coat everything evenly. Fry for about 3 minutes while stirring in between.
  7. After 3 minutes, add sliced chili, cover the pan with a lid and cook for about 5 minutes, stirring occasionally to avoid sticking to the pan.
  8. Once the okra and potatoes are tender, remove the lid and add 1/2 tsp of garam masala. Stir well to combine and fry for another 3 minutes without the lid.
  9. Turn off the flame and your Aloo Bhindi recipe is ready to be served with roti, rice, or naan
